Graeme,
You don't have a device driver installed that is compatible with the USB-to-TTL chip that is manufactured in the programming cable. A "genuine" Baofeng programming cable typically has a counterfeit Prolific chip but recently they have been providing programming cables with WCH CH340/CH341 type chip.
Usually the latest Prolific driver will not work well because they are intentionally incompatible with counterfeit copies of their chip. WCH appears to have a MacOS X driver for the CH340/CH341 chip.
I'm not a Mac user but I have read that this 3rd party driver works with the programming cables manufactured with the counterfeit Prolific chip. It also looks to be compatible with the WCH CH340/CH341 and the Silicon Labe CP2102 chip.
