It would be great if I could select multiple channels and either set them as "skipped" or "unskipped" instead of going channel-by-channel.

I believe this might be resolved as of now? See #234.
No, I don't think so. At least not on the Mac version. I opened the calling frequencies list and selected three entries, right-click, properties. the only thing I could edit was the Comment (which did work) but the Skip field is greyed out.

This does work and has worked for as long as I have been using CHIRP (since around 2012). Just did it on my MacBook Air with a image from a Baofeng UV-82.
- highlight the memory rows you want to edit.
- either a) click the [Properties] button at the top of the spreadsheet style memory editor or b) right-click a highlighted memory row and choose "Properties" in the menu that appears.
- In the Memory Properties editor that appears, tick the box to the left of setting(s) you wish to edit ("Skip:" in this case) to enable editing.
- change the setting(s) to the desired value ("S" in this case).
- click the [OK] button to make the change(s) permanent.
Which version of CHIRP are you using and which radio Vendor/Model is the CHIRP Radio Images (*.img) file are you trying to edit?
