So if I understand you correctly, if I had programmed my channels in the 1through 11 spots, it would do the same thing as it's not GMRS format? If that's true, that's dumb. What if I don't want ANY GMRS channels? How do I remove the "scheme"? Do I delete everything and start from scratch or will I get the same issues in channels 1-22?

The "UV-9G is a GMRS radio":https://www.baofengradio.com/products/uv-9g. It was manufactured to be certified for and legally used in the "FCC Part 95 Subpart E radio service (GMRS)":https://www.ecfr.gov/current/title-47/chapter-I/subchapter-D/part-95/subpart-E. It had to be manufactured the way it is in order to be granted certification from the FCC (FCC ID: 2AJGM-P52UV).

The UV-9G comes from the factory with channels 1-30 preprogrammed for TX/RX on the 22 GMRS simplex channels and 8 GMRS repeater channels (30 total). The remaining channels (0 and 31-127) are RX only unless they are programmed with one of the valid GMRS frequencies. If it was able to be operated any other way, it would not be a GMRS radio.

You should not have chose to purchase a GMRS radio if you didn't want it to behave/operate like a GMRS radio. It would seem that the Baofeng UV-9R (or one of its close variants) is the model that would have been closer to your needs.
